Then, in a vacuum environment, use the heating system to turn the ice crystals in the fruit directly into water vapor, which is pumped away by the vacuum pump. The temperature and pressure should be controlled during this process to avoid damaging the nutrition and structure of the candy. After the sublimation drying is completed, the pressure and temperature are further reduced to remove the residual moisture and ensure that the moisture content is less than 5%. Finally, take out the freeze-dried candy and wrap it with sealed, moisture-proof packaging materials.
