Freeze-Drying for Valorizing Vietnam’s Fruit Resources with 24%–29% Annual Losses

Vietnam has abundant fruit resources but suffers from severe losses. Freeze-drying technology can significantly extend the shelf life and increase the added value. Moreover, the Vietnamese government is actively promoting the processing industry of fruits and vegetables, and both the policy and technical conditions are in place. Freeze-drying processing is a feasible value-added path for Vietnamese fruits to shift from being sold by weight to being sold by weight per unit. Vietnam's industrial foundation. Abundant raw materials: In 2025, Vietnam's fruit and vegetable exports will exceed 8.56 billion US dollars, with about 5.5 billion US dollars of exports to China. The production of fruits such as durian, bananas, dragon fruit, and longan is large and the concentrated market supply periods are prone to stockpiling. Policy support: Vietnam has issued the "Proposed Plan for the Development of the Fruit and Vegetable Processing Industry from 2021 to 2030", aiming to increase the export value of fruit and vegetable processing products to over 30% of the total fruit and vegetable exports by 2030, and to add 50-60 medium-sized and large processing plants; recently, tariff adjustments have been implemented to encourage the export of processed products. There are already successful cases: Freeze-dried durian and mango dried products have been verified in the market, and freeze-dried fruits from Vietnam are popular in markets such as the United States, Japan, and the European Union. The annual growth rate of freeze-dried durian chips in China is as high as 24.6%. Freeze-dried fruits, through vacuum freeze-drying, can retain over 90% of vitamin C and polyphenolic substances, and the sugar and calories are highly concentrated, making the product value much higher than fresh fruits. Based on domestic cases, 1 ton of fresh orange fruit costs about 5,000 yuan, but after freeze-drying, it can be sold for 150,000 yuan, a value increase of 30 times; 15 grams of freeze-dried apple slices can reach a retail price of over 3 yuan, achieving "sale by weight per unit". First, the investment in freeze-drying equipment is large, and large-scale production lines often cost tens of millions of yuan, requiring an assessment of financial strength; second, freeze-dried fruits are not "healthier" and do not eliminate calories - the calories of the same weight of strawberries after freeze-drying increase from 32 calories to nearly 400 calories, which needs to be understood. Market and profit potential. China is the core export destination: In 2024, the market size of freeze-dried food in China reached 3.8 billion yuan, with freeze-dried fruits accounting for 42% of the share; the eastern and southern regions are the main consumption areas, with e-commerce channels accounting for over 67%. High-value fruits are prioritized: Freeze-dried strawberries, blueberries, mangoes, and durians have the highest added value, among which freeze-dried durian chips, although their market share is not as large as strawberries, have the fastest growth rate, reaching 24.6%. Differentiated competition opportunities: Vietnam can utilize the "import - processing - re-export" model (similar to the pistachio industry chain), combined with the local advantages of fruit raw materials, to target high-end snack foods, health meal replacements, and cross-border e-commerce categories.
